Holistic Health Chef Daily Schedule:

8:00-9:00 AM Meditation, Pranayama & Therapeutic Yoga Class

* Lunch/Dinner is included and provided when there is a cooking class prior; the meal will consist of the dishes prepared in the cooking class. Breakfast and/or additional snacks are not included. All other meals are the responsibility of the student. Meals are not included when classes are theory-based. There is a student’s kitchen on-site for students to prepare their own meals. Food and ingredients used for cooking outside of class time is the students’ responsibility. Additional materials and supplies are each student’s responsibility at extra cost and are not included in the cost of tuition.

HOLISTIC HEALTH CHEF PROGRAM

  • Holistic Health Foundations | Karen Claffey with Sylvia Claffey (6 days)

  • Holistic Health Chef Specialization | Karen Claffey with Sylvia Claffey (6 days)

 

Curriculum Includes: 

  • Kitchen Logistics: equipment, sanitation, prep, cutting and cooking styles, etc. 

  • The identification of quality ingredients based our criteria for natural food selection

  • Macrobiotic and Ayurvedic approaches to cooking 

  • The use and preparation of whole grains, beans, vegetables, sea vegetables, tofu and tempeh, seitan, fruits, nuts, condiments, soups, entrees, stews, salads, stocks, and desserts.

  • Preparation and presentation of the highest quality natural, gourmet, plant-based meals.

  • Food Focus: 

    • Vegan with some fish and sea-food dishes

    • Natural Organic Whole Foods

    • Macrobiotic and Ayurvedic Cuisine

    • Gourmet International Cuisine 

Homework assignments will be given to further the learning process.

  • The politics of food: the influence of corporate interests on dietary recommendations.

  • Holistic approaches to diet and health: the principles and practice of preparing whole foods meals that facilitate digestion; strengthen the immune system and help prevent a variety of diseases. 

  • Principles of western nutrition, macrobiotics, Ayurveda and cleansing and detoxification with natural foods.

  • How to guide patients using with food, meditation, therapeutic breathing and restorative yoga 

  • Food Focus: 

    • Vegan with some fish and sea-food dishes

    • Natural Organic Whole Foods

    • Macrobiotic and Ayurvedic cooking and medicine

    • How to use food as medicine

    • Cooking for recovery and prevention

“I’ve been a Corporate Wellness Provider and Wellness Consultant for over 15 years, and I’ve been very blessed to have met and know many wonderful healers, fitness instructors, and wellness-health providers. Not long after my mother and two other family members passed away, also had to move from the place where I Iived for 20 years. I acquired a deeper understanding of yoga and a more mindful state. The experience helped me have some peace of mind which brought me closer to my own wellness, and subsequently helped me connect back to my own work providing wellness to others. I recommend Karen’s Wellness Consultant Course to those who want to learn, enhance, or broaden their understanding of yoga, meditation and breathing, cooking /healing foods, or general wellness.

Tuition includes:

  • course manual

  • food/groceries used in the cooking classes.  

  • lunch and dinner from the dishes made in Chef program cooking classes. 

 

Additional: 

  • For Consultant program theory classes meals are not included. Participants may choose to have the optional organic gourmet vegan breakfast $15 and/or lunch $20 prepared by Sylvia. Alternatively, there is a student-kitchen available for students who would like to prepare their own meals on-site, and there are grocercy stores and restaurants nearby.

There is a kitchen on-site for residential students who opt to prepare their own meals. There are grocery stores and restaurants within 5 minutes drive.
